Summer Barbecues

With summer well and truly upon us, the rusty old barbecues are cleaned, deckchairs put out and a whole host of delicious food will be cooked this summer whether we have rain or sun.  The burnt sausage, the over-cooked burger can be testing for the best of us, and when you are trying to make changes in your life surrounding food opting for healthier options can be challenging but there are alternatives.

Minted Turkey and Mushroom Kebabs are an exciting alternative meal which is light, fresh-tasting and full of flavour with honey, lime juice and masses of fresh mint, with a fantastic calorie content of around 199 calories per serving it is a tasty alternative to that sausage. Delicious and healthy serve with warmed pitta bread and a crispy green salad.

Turkey Skewers

Serves 4, preparation time 20 minutes, marinate 1 hour 30 minutes cooking time 10 minutes
Calories 199 per serving, Fat 2g (including saturated fat 1g), Carbohydrates 13g, Protein 34g

500g turkey breast (cubed and fat discarded)
1 clove of crushed garlic
2 tablespoons clear honey
1 lime zest and juice
3 tablespoons of freshly chopped mint
150g low-fat natural yoghurt
300g button mushrooms
season to taste

1. Place the turkey cubes into a bowl and add the garlic, honey, lime zest and juice. Toss the turkey in the marinade. Place in the refrigerator and chill for around 1 hour and 30 minutes or longer if preferred.
2. Heat the barbecue. Toss the mushrooms in the turkey marinade and thread the turkey pieces and mushrooms onto barbecue skewers. Sprinkle with salt and pepper to taste.
3. Grill for 8-10 minutes occasionally turning skewers until the turkey is golden brown and the juices run clear. Serve with wedges of lime.
4. You can substitute the mushrooms for cherry tomatoes, onions or courgettes if you prefer.
